Is there a reason why it has to stay in the fridge? Hope you enjoy it! I keep it in the fridge because it lasts longer. The shallot which is blended up in it is the ingredient that makes it not shelf stable.

I would really appreciate your suggestions on how to sweeten and how much dry mustard to use instead of the Dijon m. I think my body is reacting to stevia right now too so maybe I should just skip the sweetness factor.
Perhaps there is a herb you would recommend I add? Thank you for your help! You can use 1 teaspoon dry mustard and skip the sweetener. Without the honey the dressing will be more bracing. So after tossing the salad with the dressing taste and possibly add a touch more salt to balance the acidity. Please let me know how it goes.
