Is g almonds about two cups? Guess I should invest in one. I made these, and they are delicious! I give them 5 stars, because blending the whole nut into flour MADE these wonderful. Almond flour would not have worked, because the texture was perfect.
They freeze well and keep their moisture. I plan on making these again ASAP. I used organic plain Greek yogurt, 2 c almonds which I processed into crumbly flour , 1 c of shredded coconut, and I used the rest of the ingredients and frozen blueberries and blackberries. Do NOT use frozen berries! Use fresh or thawed, drained frozen! Otherwise the batter becomes too wet and takes 3 times as long to bake the inside while the rest of the muffin burns!
Hey guys, Just wondering if the muffin should be light and fluffy once cooked? Mine taste incredible but are a little dense, not rising very much and not fluffy. They seem to have quite a wet consistency even when cooked. Thank you in advance. Love the books and app. The photography and recipes are beautiful. It can be helpful to set out all your food for the day on the kitchen counter in the morning so you know what and how much to eat. Meal planning and food prep also help make it easier. Make sure you always have a few quick fat bombs on hand for when you feel hungry. A few bags of frozen veggies in the freezer are very helpful for making quick meals. Here are some suggestions for meals you could eat on this diet. Some of them are more breakfast-like and others are more traditional lunch and dinner type meals, but don't let that stop you from eating them when you feel like it.

Also I am not allowed wheat, some of the recipes call for vital glutten wheat or wheat bran - any alternatives????
Wheat bran can often be left out of recipes, or replaced with oat bran. The vital wheat gluten is difficult to replace, so for those recipes you are better off looking for wheat free versions. I'm sorry I can't help you any better than this at the moment. Low carb vegan food is only just starting to get developed properly. It will take some time before there are easy solutions to cater to every restriction. Wat geweldig dat je deze website hebt!
